Duration:

12-18 months – 1 day a week in College, 4 days a week in the workplace

Entry Requirements:

Ideally you will have a minimum of 4 GCSEs grades at grades 2-9 (previously A*-F). Employers may also set their own entry requirements.

To start on this apprenticeship you should already have achieved a level of skill and knowledge to be able to prepare and cook a range of dishes.

You must have an employer before you begin this course.

What's it all about?:

A chef de partie is responsible for running a specific section of the kitchen. This type of chef usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly. However, in smaller kitchens a chef de partie may work independently as the only person in their section. Also known as a station or section chef, the chef de partie reports to the senior chef and has a very important role in any kitchen.

What will I do?:

A Chef de Partie will be required to demonstrate knowledge, skills and behaviours across 4 key areas. These include:

  • Business
  • People
  • Food Safety
  • Culinary

The End Point Assessment will test the entire Standard, and will comprise of: Knowledge test, practical observation, culinary challenge project and observation and a professional discussion.

This qualification is graded Pass/ Distinction/Fail

What can I do next?:

Progression from this apprenticeship is expected to be into a senior culinary chef role.

Stansted Airport and its business partner’s offer many exciting career opportunities and this qualification will enable you to secure a role across a number of specialist areas within the food production and hospitality sector.  You could be working within a multinational hotel, a VIP lounge at the airport or even a highly reputable restaurant or food outlet as a Head Chef, Executive Chef or a General Manager.

Additional Info:

Apprenticeship Standards are assessed through independent end point assessors. Your role as an apprentice may vary depending on your employer. Learners that have not yet achieved a minimum of grade 4 or C in GCSE English or Maths will be required to complete a Level 2 functional skill qualification prior to taking the end point assessment.

An apprenticeship comprises two parts:

  • Typically 20% study element (at Harlow College or Stansted Airport College).
  • 80% work based element with an employer. It is your responsibility to find an employer.
